Glasgow's jam and confectionery industry expanded rapidly from the 1860s, catering for and encouraging the notorious "sweet tooth" of the average Glaswegian. The greater availability of cheap sugar from Europe from the 1880s provided a further boost. A large proportion of the jams, marmalades and confectionery manufactured in Glasgow was exported to Europe and all corners of the British Empire.
